3 Sweet (and healthy) ice cold treats for Summer!

COCONUT LIME POPSICLES

Serves: 10

INGREDIENTS

  • 1 14-ounce can light coconut milk
  • 1 cup skim milk
  • 1/4 cup sugar
  • 2 limes, juiced & zested
  • 1/2 cup unsweetened shredded coconut

 

METHOD

Combine the coconut milk, skim milk and sugar in a saucepan at medium heat. Whisk until the sugar is fully dissolved for about 3-4 minutes. Remove from the heat and wait until the mixture has chilled.

When the milk mixture has had time to cool, stir in the limejuice, zest and shredded coconut.

Pour the mixture into the popsicle moulds and freeze for at least 3-4 hours.

TIP: To remove the popsicles, run the moulds under hot water for a few seconds.

MIXED BERRY COCONUT ICE BLOCKS

Serves: 8

INGREDIENTS

  • 1/2 C Blueberries
  • 1/2 C Raspberries
  • 1/2 C Blackberries
  • 1 Tbls Honey
  • 1 tsp Lemon Juice
  • 1 C Full Fat Coconut Milk
  • 1/2 Vanilla Bean Pod, scraped out
  • 1/2 tsp Vanilla Extract
  • (Optional) Sweetener

 

METHOD

Place the honey, berries and lemon juice into a small pot and place over medium heat. Cook the berries until the juices run and the berries start to pop. Remove from the heat and let the mixture cool for 30 minutes.

Mix the coconut milk, vanilla seeds, and vanilla extract (along with sweetener) in a bowl.

Place a few spoonfuls of the coconut milk into the popsicle mould. Add some berries and more coconut until the moulds are full. You can choose to mix it or leave it layered.

Freeze for 3 hours or overnight!

CHOCOLATE-RASPBERRY FROZEN YOGURT

Serves: 10

INGREDIENTS

  • 2 cups of fresh or frozen raspberries
  • 2 cups of low-fat plain yogurt (Preferably Greek-style)
  • 3-5 tablespoons sugar
  • 1/2 cup mini chocolate chips

METHOD

Puree the raspberries, yogurt and sugar and place in a food processor until smooth.

Divide the mixture among your ice block moulds, stopping about 1 inch from the top. Evenly divide your chocolate chips among the moulds. Stir the chocolate chips into the raspberry mixture and remove any air pockets at the same time. Insert the sticks and freeze until completely firm (Approximately 6 hours).
