This slice is a great lunch box addition or something simple to serve for brunch on the weekend.
The slice is what I call a â€œone-pot-wonderâ€ as you just put all the ingredients in a pot (bowl) and mix!
Itâ€™s delicious and quite healthy too â€“ an all around winner!
â€¢Â Â Â 375g zucchini (around 3 medium sized zucchini)
â€¢Â Â Â 1 large onion
â€¢Â Â Â 3 rashers bacon
â€¢Â Â Â 1 cup grated cheddar cheese
â€¢Â Â Â 1 cup self-raising flour
â€¢Â Â Â Â½ cup oil
â€¢Â Â Â 5 eggs
â€¢Â Â Â Salt and pepper
- Grate unpeeled zucchini coarsely, finely chop onion and bacon
- Combine zucchini, onion, bacon, cheese, flour, oil and lightly beaten eggs, season with salt and pepper
- Pour into well-greased rectangle tin (16cm x 26cm approx)
- Bake in moderate oven 30-40 minutes or until golden brown
